Ingredients: 500 gm Chicken-boneless flat pieces, Small red onions -10,Carrot one large, Capsicum-1,Tomato -1,Yellow bell peeper- 1,Garlic- in small pieces.
To marinate:
ginger powder 3 large teaspoon
mustard paste 1 large teaspoon
honey – 1/4th cup
lemon juice –from 2 lemons
lemon peels
ginger garlic paste 1 teaspoon
onion paste -2 table spoon
Salt- according to your taste
Crushed red chili powder- 1 teaspoon
Black peeper – ½ teaspoon.
Make the marinate by mixing above ingredients finely. Wash the chicken with warm water and dip in the marinate for one hour.
Cut the carrot in flat round or oval flat pieces. Put oil in a pan and heat. Put the small red onion and oval pieces of carrot in medium heat. Once they become glazy ,put garlic pieces and little salt and heat 30 more seconds. Take out and put in a oven friendly container.
Take the marinated chicken and put the chickens over the carrot-onion.U can put some green leaves in between, I didn’t. Pour some honey over the whole thing and put in the oven at 200 for 10 minutes.
Chop capsicum , tomato and yellow bell peeper in small pieces and fry in another pan , add salt and turmeric accordingly to make a colourful mixture with lots of antioxidants.
Take out the chicken and spread the colourful veggies over it. Serve hot with rice or flat bread.
